February's cooking club is being hosted by Holly Mesarch. The theme is Sweetheart's Favorites!
What a wonderful theme for the month of love. So here's what you do...go and ask your sweetheart what his favorite dish is that you make. If your husband is anything like mine, he'll ask if this is a trick question:) Assure him there is no wrong answer (unless he says he doesn't like anything you make). Then make that dish...appetizer, casserole, salad, main dish, dessert, drink...whatever his favorite is. This should be a fun turn out with a variety of dishes!! Hope to see you all there...February 3rd at 7:00 p.m.

Curry Chicken
4-5 chicken breasts
2 cans Cream of Chicken Soup
1 can Cream of Mushroom Soup
1-2 tsp. curry powder
2 Tbl. Worcestershire sauce
1 1/2 -2 cups milk
~4 cups cooked rice.
Boil chicken, cool, then shred. Set aside.
Blend remaining ingredients in saucepan until creamy. Add shredded chicken.
Serve over hot rice.
Top with any of the following:
Shredded cheese
Chopped green onions
Sliced olives
Chopped tomatoes
Chinese noodles
Corn
Coconut
Peanuts
Raisins (I often add these to the mixture as we all like it with raisins and it plumps them up.)
Reasons why we both love this meal:
It's...
Creamy goodness in a bowl.
Comfort food.
Easy, and very forgiving (unless you burn it.)
Can almost be made out of the contents of our food storage/freezer supply of food.
Everyone in our family likes it-even if it IS just for the toppings.
